We, Hungarians love to eat. We often pile large portions on our plate, even if we claim going on a rigorous diet time and again. But who can say no to our delicious, zesty traditional dishes? It is hard indeed - not only for us, but for those living abroad as well. Hungarian cuisine is esteemed as one of the best worldwide - often knowing only the famous gulyas and paprikash. But it is worthwhile getting familiar with the wide range of regional specialities of Hungary: the fish dishes of Lake Balaton, the pörkölt and various potato dishes of the Large Plains, the scrumptious game dishes of Northern Hungary - the mouth-watering list goes on. A typical dish is sparing of ingredients - all but calories! - using seasonal vegetables and fruits and finding uses for all parts. The result is a wide array of appetizing dishes, reflecting the history and ingenuinity of the Hungarian people. Throughout centuries we have assimilated practices from the old Hungarian, Turkish, Italian and French (through the Viennese) cuisine, continually polishing and varying our traditional recipes. This book introduces the world of traditional Hungarian cooking with a selection of dishes I have prepared many times and hopefully will continue doing so, together with our adventurous Readers.

Nous autres, Hongrois, aimons bien manger. En général, nos assiettes sont bien pleines, encore que nous ayons parfois des remords ez que nous nous mettions de temps en temps au régime. Mais qui peut résister á nos plats épicés, variés, ayant un caractére familial? Trés peu, parait-il: méme si notre pays est assez petit, la cuisine hongroise est notée parmi les meilleures du monde. Et cela, malgré le fait que l'on ne connaisse, d'habitude, que nos plats épicés, au paprika, surtout les goulaches!

Noi ungheresi amiamo mangiare. Colmiamo i nostri piatti per benino, anche se talvolta dovremmo stare a dieta. Ma chi riuscirebbe a resistere a sapori di casa cosí aromatici e svariati? Pochi, tanto che, per quanto piccolo il nostro Paese, la sua cucina é considerata fra le migliori al mondo, sebbene spesso si conoscano soltanto i piatti alla paprika piccante e il gulyás!

A los húngaros nos gusta comer. Y nos servimos siempre con los platos repletos, aunque alguna vez se nos ocurra también entregarnos a duro régimen. Pero, quién sería capaz de resistirle a nuestra comida tan variada, tan condimentada y con ese sabor casero tan característico? Parece que muy pocos, puesto que a pesar de ser un país pequeno nuestra cocina figura entre las mejores del mundo.
